Interview with Jean Burke, owner

Q: How did you get involved in this business?
A: My first job at 14 was in the food industry. I worked in restaurants through high school and college. I noticed after moving to Parker that the only caterers seemed to be the national chain restaurants. I wanted to provide a different food experience to someone hosting a party. The idea behind Bites is to have a drink in one hand and a beautifully assembled bite of food in the other.

Q: What distinguishes you from other businesses in your category?
A: Other restaurants in the area offer a catering menu that cannot be varied by the customer. Bites is a custom catering company specializing in bite-sized hors d’oeuvres constructed in an imaginative way. We will accommodate any dietary restrictions and substitute proteins to personalize a menu for any size party. From our salmon sliders with apple relish served neat to chocolate mousse shots garnished with sugar and berries, we aim to elevate the traditional catering experience.

Q: What do you like best about your line of work?
A: The catering business provides many opportunities to meet so many people I otherwise wouldn’t get to know. I have catered events for members of the local community such as Mayor Mike Waid, served at business openings and met many great people along the way. Each experience allows me to tap into my creativity. Food should be fun!

Q: What is your business’ biggest challenge?
A: My biggest challenge has been changing people’s perceptions on catered food. The menu options may be bite-sized but this allows people to dine on cuisine of differing textures, spices and temperatures on one plate. Small bites, big flavor is our goal. The food may come in smaller packages but we do not sacrifice quality of ingredients, flavor or presentation.

Q: Something people might be surprised to learn about you or your business:
A: My business started in my kitchen spontaneously when I hosted the owners of Wild Yankee Liquor in Parker. I didn’t prepare the usual spread they were expecting and they encouraged me to pursue the idea of a business. I hadn’t considered the idea of being a caterer before, but the reaction to the food inspired me to begin this adventure. Bites was born a short time later.
