Until 10 p.m. today, guests at IHOP can get three free pancakes to mark Mardi Gras. Instead of a bill, diners are asked to make a donation to the Children’s Miracle Network, the chain announced on its website.

Last year, more than $875,000 was raised for charity.

The day before Ash Wednesday is known as Fat Tuesday, or Mardi Gras, because items not eaten during the Catholic fasting period were consumed in advance of Lent.

“Strict rules prohibited the eating of all dairy products during Lent, so pancakes were made to use up the supply of eggs, milk, butter and other dairy products, hence the name Pancake Tuesday,” the IHOP site explains.
