Interview Serge-Patrick Kabongo, owner
Q: How did you get involved in this business?
A: I was raised in Belgium. Even though I am an aviator by trade, I longed to become a chef in order to bring the very best traditional crepes and waffles I was privy to as a young child back home to Colorado’s culinary community. Upon completing my professional training at Denver’s Johnson & Wales University, I exchanged my pilot’s wings for a chef shirt in order to establish Crepes a’ Go- Go and take my recipes of authentic French crepes to the mountains and plains of Colorado.
Q: What distinguishes you from other businesses in your category?
A: I’ve recently partnered with gourmet chef Christopher Bennett, who hails from Vermont’s New England Culinary Institute, to bridge boundaries and stereotypes, and to provide traditional French crepes (with a contemporary twist) that are simple, elegant and delicious.
Q: What do you like best about your line of work?
A: The freedom to experiment with international cuisine, utilizing only the very best Colorado products to create something unique with a Crepes a’ Go Go stamp of excellence.
Q: What is your business’ biggest challenge?
A: Educating the consumer base and introducing them to the different possibilities crepes can offer — altering perceptions and preconceived notions about crepes.
Q: Something people might be surprised to learn about you or your business:
A: Christopher, who graduated from Littleton’s Heritage High School, and I are not brothers, but connected by chance — by our passion for cooking exemplary French cuisine. Globally, as plates and palates have changed, so has the look of the average chef. We are two chefs from opposite ends of the world, connected by a common culinary thread. That thread brings to you our finest.
