Baked in 100 seconds: Fringe Pizza brings Neapolitan-style gourmet pizzas to Boulder County

A new gourmet pizzeria has arrived in Gunbarrel.

, a grab-and-go restaurant, recently opened for business at 5400 Spine Road. It offers Neapolitan-inspired pizzas baked in about 100 seconds, said founder Nate Rajotte.

“A true Neapolitan pizza is made in 90 seconds or less,” Rajotte said. “We take an extra 10 seconds to make the pies crisp.”

Use of high quality ingredients, mostly sourced locally, gives Fringe Pizza its unique character, Rajotte said.

His natural sourdough starter is about 2 years old, he said. The pizza dough is cold fermented for 48 hours to help develop flavors and make the crust light and airy. The pies are hand-stretched.

Rajotte said he’s particularly proud of the Rapini, which features Calabrian chilis, garlic oil, roasted rapini, mozzarella di bufala, Parmesan cheese, and is topped with bread crumbs and house-made lemon-honey dressing. “Our menu will change seasonally.”
