“Possibly the best way to experience the pleasures of artisan salt is to use it on the simplest of foods,” writes Mark Bitterman in his new book, “Salted.” Take this simple recipe for radishes with butter that calls for fleur de sel, which Bitterman describes as a “solar evaporated” salt with a “mild, delicate crunch.” Makes 4 servings.

Ingredients

12    radishes, washed, dried

2     tablespoons unsalted butter, softened

     Fleur de sel

Directions

If the greens on the radishes are pretty, leave them on; if not, trim. Make sure radishes are completely dry. Arrange the radishes on a plate. Put the butter on the plate or in a small crock and the fleur de sel in a small pile on the plate. Spread a thin film of butter on a radish; sprinkle with fleur de sel. Eat.
