Adam’s Waffles

On Mother’s Day, we are going to make my mom homemade waffles because the first time we had them, she really savored every bite. She loaded hers with raspberries and powdered sugar, and downed three (that is a lot for her). We are going to give them to her loaded with strawberries, blueberries, raspberries and powdered sugar.Adam Hangland, fifth grade, Commerce City

Ingredients

1¾ cups unbleached, all-purpose flower

¼ cup granulated sugar

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1¼ cups buttermilk

6 tablespoons unsalted butter, melted, cooled slightly

1 teaspoon pure vanilla extract

3 large eggs, separated

Nonstick cooking spray

Directions

Put the dry ingredients in a large mixing bowl and stir to combine. In a separate bowl, whisk the buttermilk, butter, vanilla,and egg yolks and stir into dry ingredients until mixture resembles a smoothbatter.

Whip egg whites till firm. Fold into the batter.

Coat waffle iron with non-stick cooking spray

Pour 1 and ¼ cup batter on waffle plate. Bake for 3 minutes.

Smother in desirable toppings and serve to Mom for breakfast in bed.
