
The duo behind Nocturne, an 11-year-old Five Points jazz and supper club, are opening a “Parisian-inspired” bistro next door that will focus on cocktails featuring French spirits and boast one of the largest Champagne-by-the-bottle lists in Colorado.
Nicole and Scott Mattson plan to introduce La Vie En Rose on Friday, Sept. 4, at 1336 27th St. In addition, the spot will serve “a selection of delicate hors d’oeuvres, as well as shared small plates that are approachable and Champagne-friendly,” the owners said. Dishes include steak tartare, gluten-free popcorn fried chicken and a “grand gougère” with a warm ham mornay sauce.
“La Vie En Rose is so much more than a well-known song,” said Nicole Mattson in a statement. “Edith Piaf wrote it in the wake of war, reminding people that love and human connection could make life feel beautiful again – itap an optimistic view of the world.”
But it’s the 120 different bottles of Champagne that are at the heart of the 1,300-square-foot bar, which will be decorated in “plush seating and rich velvet curtains lining the edges of the room” and “a gently curving bar incorporating a grand built-in Champagne bowl that sits beneath a climate-controlled Cave du Vin, occupying the whole mezzanine level as a dramatic backdrop.”
Atmosphere will be provided by “the scents of jasmine, rose, citrus and chartreuse,” as well as “breezy French music filling the air,” the owners added. There will be a small patio as well.
La Vie En Rose will be open from 5 to 10 p.m. on Wednesdays and Thursdays, 5 to 11 p.m. on Fridays and Saturdays, and 5 to 10 p.m. on Sundays.
