Popular Denver bakery opens European-style pastry shop next door

Hearth Patisserie will offer cream puffs, fruit tarts, flan, brownies and much more

A popular Denver bakery known for its artisan loaves of sourdough bread, coffee, laminated croissants and other treats is opening a European-style pastry shop today next door to its location in West Highland.

Hearth Bakery, at 3621 W. 32nd Ave., announced the opening of Hearth Patisserie this week, in the former Happy Cakes space.

The new store, led by pastry chef Kevin McCormick, “is built around afternoon and evening desserts: something to enjoy after dinner, something to bring home, something for a special occasion,” Hearth said in a statement. “The menu will change with the seasons and lean toward the refined, with entremets, tarts, and choux alongside a tea-focused beverage program.”

The opening pastry case includes: chouquettes, a reimagined take on the cream puff, in raspberry (mint, vanilla chantilly, pastry cream) and tropical (pineapple, coconut chantilly, lime); Paris-Brest with choux pastry, hazelnut praline, mousseline, and pralinettes; a multitude of tarts, including strawberry with almond and mascarpone cream; Gâteaux, including raspberry pistachio; Flans in Parisian with vanilla bean custard and pistachio, salted caramel brownies; tiramisu and more.

McCormick, who was most recently the culinary director at Union Station, brings 20 years of pastry experience, according to Hearth.

Hearth was founded in 2022 and now has four locations in Denver.
