Kip’s Grill and Cantina

121 Pagosa St., Pagosa Springs

970-264-FOOD (3663)

The sign outside Kip’s reads, “Pleasin’ the People.” And that says it all. In the crammed front room and side patio, buckets of iced Coronas and frosty, tart margaritas disappear into the happy hubbub. So do paper plates of chubby tacos spilling top sirloin, juicy pork, charred mahi-mahi or roasted chile peppers, all spiked with truly fresh salsa fresca. Dribble on the fiery house- made habanero sauce; its smoky heat will make you weep. The jalapeño sauce will only make you cry. Going gringo? Kip’s also has tasty burgers of buffalo and elk raised just over Wolf Creek Pass in the San Luis Valley.

If you’ve got a clear sense of your own personal time, and can attend an Aug. 9 workshop in Denver, fill out an online application. But hurry, time’s running out: Applications must be completed by Friday.

ALL-AMERICAN EVENT

Silverton’s July 4 Celebration

All day Tuesday

Silverton’s annual shindig is shaping up to be the must-do among a gazillion celebrations to choose from. The thing gets going at 10:30 a.m. with a parade led by the hometown brass band, moves right into a water fight between the San Juan and Animas fire departments at the intersection of Greene and 14th streets, and winds up at dark with an hour-long fireworks show shot into the night sky. If you go, plan to camp or stay in Durango because in-town hotel rooms have been sold out for a year.
